Last Stop Ramen

Your uncle Isamu ran a ramen shop at the last stop of a mountain railway in Gunma for thirty-eight years, and in August he left it to you. Trains come six times a day and most of the 800 people in town are over seventy. His broth recipe says things like "salt: enough", and the regulars will tell you how close you're getting. The chain shop down at the new service area would like to buy the recipe.
